Leftover Rice

Cecily again: This is also super speedy, and uses up rice. Don’t you always have leftover rice?

Put a little butter in a deep frying pan or wok. Toss in the rice, stir and heat. Crack eggs right into the rice. Stir and keep cooking. We sometimes eat this in flour tortillas with hoisin sauce, or in tortillas with salsa.
